You don’t have to have been swimming for two hours, or even played beach tennis for half an hour. You haven’t done anything special, and yet there comes that moment when your stomach starts to protest. So you open your beach bag with hope, only to find a sad, soggy piece of toast that’s become one with the tomato and lettuce, or some half-crumbled crackers. Epic fail.

Well, this year, “no more charcoal.”

This summer, we’re upgrading our culinary game on the beach chair.

The beach calls for summer soul food: refreshing, flavorful dishes made with the best Greek ingredients, that hold up in the heat and turn a break from swimming into a celebration.

Take the Tupperware out of the cupboard, and let’s check out 5 creative recipes and the perfect refreshing drinks to pair with them.

  1. The upgraded Greek village salad: Pasta salad with sour mizithra and caper pesto

  • The twist: Instead of greasy french fries, fill the container with refreshing cucumber sticks and a few lemon slices (even better if you slice them right there on the spot).
  • Why it works: They’re eaten ice-cold, they’re delicious, and the cucumber provides essential hydration after a swim.

  • Why it works: It pairs perfectly with traditional Thessaloniki breadsticks or dakos. It’s light, super nutritious, and incredibly refreshing.

And what do we drink while lounging on a beach chair?

Good food calls for the right refreshing accompaniment. Put the following in your cooler with plenty of ice for the ultimate refreshment:

  • The Alcohol-Free Herbal Refresher: Iced mountain tea with slices of ripe peach and fresh mint. It’s a caffeine-free, deeply hydrating drink that gets a fantastic natural sweetness from the fruit.

Capers Pesto

Here’s how to make caper pesto (perfect for pasta salad or as a spread on bruschetta); the ideal proportions for a small jar are as follows:

Ingredients

  • 3 tablespoons capers (well-drained). If they’re in brine, rinse them lightly. If they’re in salt, rinse them very well and let them soak in water for 10 minutes to remove the saltiness.
  • 80 grams of walnut kernels (or toasted almonds if you prefer a sweeter, Cycladic flavor).
  • 1 clove of garlic (without the sprout, so it’s not too heavy at the beach).
  • 150 ml extra virgin olive oil (about 3/4 of a cup).
  • 2 tablespoons finely chopped fresh parsley (adds perfect balance and a vibrant green color).
  • Freshly ground pepper.

Be careful with the salt: 99% of the time, you won’t need to add any salt at all.

Instructions

  1. Place the capers, nuts, garlic, and parsley in the food processor.
  2. Pulse for a few seconds. You don’t want them to become completely pureed; instead, leave small pieces (the mixture should be “grainy”) so you can feel the textures in your mouth.
  3. Start adding the olive oil slowly (in a thin stream) while the food processor is running at low speed, until the pesto is smooth and has a nice, velvety yet rich texture.
  4. Add the pepper, give it a final stir with a spoon, and it’s ready to eat.

Smart Tip: If you have any leftovers—just saying—put it in a small jar, cover the surface with a thin layer of olive oil, and it will keep in the fridge for over a week.
