The perfect recipe to go with your first cup of coffee of the day
Ingredients
50 g sunflower
oil 30 g melted and cooled
butter 1 large egg
100 g yogurt
Zest of 1 lemon
1 tbsp. lemon
juice 120 g brown sugar
1 pinch salt
1/4 tsp baking soda
1 tsp baking powder
130 g all-purpose
flour 1 cup fresh blueberries, washed and dried
For the jam
: 1 cup blueberries
1½ tbsp sugar
A few drops of lemon juice
For the crust
: 3 tbsp all-purpose
flour, 3 tbsp cold
butter, 2 tbsp sugar
, a little lemon zest
Instructions
First, prepare the jam by combining all the ingredients in a small saucepan.
Use a fork to mash a few blueberries to release their color, but leave most of them whole.
Boil the mixture for 2–3 minutes, until it thickens slightly into a deep red jam. Let it cool.
In a bowl, mix the ingredients for the crust and rub the mixture with your fingers until it resembles wet sand. Set it aside.
Bring all the muffin ingredients to room temperature. Line a muffin pan with large paper muffin cups.
Preheat the oven to 170°C on the convection setting.
In a bowl, whisk together the sunflower oil, cold melted butter, egg, yogurt, sugar, lemon zest, and lemon juice until well combined.
Sift the flour, baking soda, salt, and baking powder into the wet ingredients.
Fold in with a spatula until the flour is incorporated, being careful not to overmix the batter so the dough doesn’t become tough.
Mash a few blueberries with a fork and add them to the mixture. Gently fold in the remaining whole berries.
Spoon the mixture evenly into the paper liners, adding a little red jam between each spoonful.
Garnish the tops of the muffins with jam containing whole blueberries and sprinkle a little of the crumb topping over them.
Bake the muffins on the middle rack of the preheated oven for about 25 minutes, until they rise and set. Before removing them, insert a toothpick into the center of each muffin to make sure they’re cooked all the way through.
Let them cool for 10 minutes in the pan, then remove them and enjoy.
